Cooling the heatwave: probiotic fruit ice cream with kefir.

Try this added sugar-free ice cream recipe and cool down a bit on these hot summer days!
Kefir is a superb ingredient, it contains tons of beneficial bacteria that are good for your gut flora, plus its bubbly nature gives the ice cream a super texture. But if you don't have any at home at the moment, feel free to swap it for yoghurt!
Now we've added a variety of berries to the recipe, which you can swap for peaches, melons or any other fruit you like.
Ingredients:
- 370g kefir
- 100g frozen blueberries
- 100g frozen raspberries
- 1 tablespoon Hester's Life Ground Date
- 1 teaspoon lemon juice
- + fresh berries to your liking
Method:
- Place half of the kefir and all other ingredients in a blender and blend thoroughly.
- Pour the mixture into a deeper container and carefully pour the remaining kefir over the top.
- If you like, you can then add the fresh berries and cover the whole thing.
- Put it in the freezer for at least 4 hours.
- Remove 20 minutes before serving to allow it to melt a little. This will make it easier to create dumplings.
