Vegetable and feta quiche

Spare the meat, and serve some quiche!
Ingredients:
- 1 zucchini
- 1 piece of carrots
- 1 egg
- 40g feta cheese
- 1 bunch of parsley
- 3 tbsp. Hester's Life Oat flour
- 4 tbsp. Hester's Life Oatmeal
- salt, pepper
Preparation:
- Grate the vegetables, and squeeze them.
- Chop the parsley, add to the vegetables, mix with all the other ingredients and leave to stand for a few minutes.
- Shape into 4 cm diameter discs and place on a baking tray
- Bake in a 180 C oven for 20 minutes.
