Whip up apple rapid cake

If you love apple pie, you're right to be excited about this recipe! Forget about wasting time with measuring and stretching dough, just toss the ingredients into a knife chopper, mix and bake. That's really all it takes!
This cookie is a #deliciouslyconscious companion of Sunday afternoons. It's light and fruity, but it's the ground dates, cinnamon and cardamom that give it its real character.
Ingredients
- 4 tablespoons Hester's Life Oat Flour
- 4 tablespoons of Hester's Life Ground Date
- 4 tablespoons thick coconut milk
- 4 eggs
- 1 pinch of salt
- ½ teaspoon ground cinnamon
- 2 pinches ground cardamom
- juice and zest of 1 lemon
- 1,5 kg red apples
Method:
- Turn on the oven and preheat to 180 degrees.
- Cut the apples in half, remove the cores and, except for 4 halves, chop them in a shredder until they are tiny.
- Take the apples out of the blender and add 1 tbsp of Hester's Life Ground Date, the spices and the juice and zest of the lemon.
- Measure out the Hester's Life Oat Flour, Ground Date into the blender
- Add the eggs, coconut milk and salt and blend until smooth.
- Spread the chopped apples in a heatproof bowl and cover with the batter.
- Slice the remaining 4 halves of the apple into thin slices and arrange them in a neat row on top, finally sprinkle with a little cinnamon.
- Bake for 45 minutes (fan oven)
